Rise and Shine: Fast Chocolate-Banana French Toast

My fruit basket was looking a little bit too full, and I know I’ll never be able to finish my loaf of bread before it’s best before date (into the freezer it will go, of course!), so I decided to kill two birds with one stone (in the most metaphoric, vegetarian way) and make some fruity french toast this morning!

Fast Chocolate-Banana French Toast (Serves One… Me!)

  • 1 egg
  • 1 tsp cocoa powder
  • 3 tbsp milk (or soy milk)
  • 2 slices whole wheat bread
  • 1 banana, peeled, cut in half and cut again into planks
  • Cooking spray

Pre-heat two non-stick frying pans on medium heat and spray with cooking spray.

Mix the eggs, cocoa powder and milk in a wide, shallow dish. Don’t worry about clumps of cocoa powder. Put each slice of bread into the mixture, flip to coat the other side, and stick into the hot frying pan. Cook for two or three minutes on each side.

While the bread cooks, place the banana slices into the other frying pan and cook until soft.

To serve, plate french toast and top with sauteed bananas.

This is a special treat breakfast! 400 calories, 15 grams of fat, 14 grams of protein and 7 grams of fibre.
